I've heard about these things called saccharine doppelgangers, but pretty much all I've heard is that they're a bad thing to have in your session. Its section on the FAQ hasn't hit my timestamp yet, either.
So basically, what are they? What makes them so terrifying that people speak of them in the same tone as Others and Angels? Are they different from session to session, version to version? I tried asking one of the veterans in my session, but he just told me I don't want to know.

At least Others and Angels follow some pattern. Doppelgangers do not.
Let just say that they are terrifying glitch (?) and leave it here.

But how am I supposed to fight them or prevent them from appearing if I don't know what they are?

If the stories are to be believed, you WILL know them when you see them. As to preventing their appearance? Whisperings only know how you prevent something like this from happening to you.
I think the best bet is to hope you never encounter one and if you do, try to get the hell away before it spots you. Like I said, there are stories about them, and all paint the cursed things as being almost as hard to beat as BQ if not harder.

I don't know where they come from.
They're not mindless; they can play the game, quest, ascend, same as a player.
Scrying and game mechanics identify the other one as the player, without fail.
Keep it away from Player ID pendants at all cost.
Playing along is dangerous; making it suspicious and angry is worse.
I think it's infectious.

Hey. The Seer Network has a theory on those. Please, avert your gaze if you are of weak nerves.
You know Magicants, right? They are kinda Easter Eggs of Sburb. There are old records stating, that they appeared with introduction of the last "classic" Aspect of the game. The Aspect that shares the affinity with those hidden places, namely Aspect of Void.
These sugary things share outward appearance of the Players. There is an Aspect that can be used for shapeshifing. Fogging Aspect of Mist. Mist as an Aspect opposite of Void was probably introduced with it.
Our postulate is that Saccharine Doppelgangers are just that. An Easter Egg celebrating Mist Aspects introduction in the game. And, like many, many things that were introduced in the game it went horribly wrong.
Don't get me wrong. There are no records or evidence linking Mist HEROES with those things. If your session has a Mist Player it doesn't mean that you will encounter any of this things. I was in a session with a Mist Hero and we haven't encountered this. When it was my turn to become a Seer of Mist, i haven't encountered this. This is the same thing as a Magicant that can be encountered without having a Hero of Void in your session.
A good thing is that they are killable. Watch out for a faking death or you know, "never found a body" thing. If you cannot confirm that this thing is DEAD, it is not dead. a proper killing metod would involve cutting the body to pieces (it feels like taffy filled with coloured syrup after it stops moving) and burning it. Pour alcohol or oil on it if it doesn't catch fire. Collect the ashes and give them to the Queen of your Dream Moon. tossing it in the crypt would be the best thing to do. only if you killed all of them you can feel safe.

That seems a little extreme just to confirm a death. Can they regenerate or something? And have you ever encountered one or known someone who has? You can never be TOO sure. Not with them.
You will believe me when you will be in the same situation.
It survived a nuclear explosion with ground zero on its face. It was charred afterwards yet it was grinning. It just... slowed down.
And then a Bane with chainsawkind made minced marshmallow out of it.

A cross between the Terminator and a psychotic version of Pinocchio made out of candy is the best way I can think of to describe them. They're nasty.
Trying to kill one with your bare hands is basically impossible.
